RAMP RISOTTO OF SUNFLOWER SEEDS

This recipe could also be called ‘Risotto, twice removed.’  It is not the classic dish for two reasons: it does not contain butter or parmesan, AND it does not even contain arborio rice, or any rice for that matter! This recipe would be suitable for someone following a grain-free diet or paleo diet, and of course a vegan diet as well.

 

  INGREDIENTS

Sunflower Seeds

Yellow Onion

Garlic

Nutritional Yeast

Braggs Liquid Aminos

Oyster Mushrooms

Wild Ramps

Dried Oregano

Sea Salt

Smoked Paprika

Black Pepper

Vegetable Broth 1-2 quarts

 

 CHEF'S TIP  

Chef’s Tip: If you do consume grains in your diet, there is no shame in throwing some leftover cooked rice into this recipe towards the end.  Be sure to adjust your seasoning accordingly, as adding bland rice will dilute the flavor. The same goes for other embellishments such as pesto; a little stirred in towards the final stages adds great depth.
