Try this thick, creamy non-dairy ice cream made from coconut will give your body and taste something to really be excited about! The best part is, they require no ice cream maker r A healthy twist on a classic coconut flavored ice cream.

VANILLA COCONUT BASE

INGREDIENTS

Blue Mountain Organics Raw Sprouted Cashews (soaked) 3 cups

Coconut Milk (can, full fat variety) 1 can, only the cream part

Blue Mountain Organics Raw Coconut Butter 3/4 cup

Vanilla Extract 1 tsp

Sea Salt ⅛ tsp

Coconut Secret Coconut Nectar  1/2 cup

Stevita Stevia Extract 3 drops

Lemon Juice 2 Tbl

 

PREPARATION

Combine all ingredients in a Cuisinart food processor.  Process until smooth and creamy.  Remove half and set aside.

Fruit Flavoring:

Frozen Fruit of Choice: 3-4 cups

Add frozen fruit to food processor. Blend until smooth.

Taste for sweetness.

CHEF'S TIP

Repeat with second half of base, and another fruit. Freeze until use.  Thaw for 1-2 hours prior to consumption for best results.
